6 pounds tomatoes, cut in half

Salt and pepper, to taste
2 yellow onions, chopped
6 cloves garlic, minced
¼ teaspoon crushed red pepper
2 tablespoons olive oil
4 cups fresh basil leaves, chopped
3 to 4 cups water
Balsamic vinegar, to taste
Croutons
2 slices 2% Cheddar cheese
2 slices whole-grain bread
Before you begin: Wash your hands.
Fresh chopped basil can be used for a garnish on top of each bowl of soup.
