Scientific evidence associates whole-grain intake with lower risk of cardiovascular disease, type 2 diabetes and obesity—leading causes of morbidity and mortality in the US—and is the basis for current recommendations. Yet, disparity continues between the evidence and consumer intake. This teleseminar will examine the scientific evidence, highlighting outcomes of recent summits and conferences; look at current whole-grain recommendations, including how whole grains are positioned on ChooseMyPlate.gov, and intake levels; discuss barriers to and opportunities for increased intake of whole grains; and suggest practical strategies nutrition professionals can apply in their practice settings to help individuals obtain essential nutrients, different types of fiber and important phytochemicals.
Objectives
- Discuss the strength of the evidence linking intake of whole grains to health outcomes such as cardiovascular disease, type 2 diabetes and body weight, and weigh this evidence in light of data adjusting for confounders such as cereal fiber, magnesium, or the use of different definitions of whole grain food.
- Explain how scientific evidence influenced current dietary recommendations for whole-grain intake (e.g. Dietary Guidelines for Americans, 2010 and ChooseMyPlate.gov) and address the issues in the recommendation, including make "at least half your grains whole" and select "high-fiber whole grains."
- Compare and contrast whole-grain intake among key population groups in the U.S. including ongoing disparities between scientific recommendations and consumer intake.
- Demonstrate how grain-based foods can serve as a vehicle to make progress toward meeting dietary guidance by delivering whole grains, dietary fiber and reducing fat, sodium and sugar content.
- Discuss how dietitians/dietetic technicians can work together with government, industry, academia and trade organizations to increase the availability of added nutritional value whole grain foods in the marketplace.
