Online Learning Module: Celiac Disease and the Gluten-Free Diet

This module covers the medical aspects of celiac disease (symptoms, screening and diagnosis) as well as the intricacies of the gluten-free diet including: ingredients and label reading, cross-contamination, hidden gluten sources and problem foods, assessment and follow-up and nutritional adequacy of the gluten-free diet.

Learning objectives include:
