Kansas State University Will Be Home for Research Center in Child Nutrition

Agriculture Secretary Tom Vilsack announced in April that Kansas State University has been selected to establish a Center of Excellence for Food Safety Research in Child Nutrition Programs. The Center will provide a new and holistic research approach to determine how new initiatives, such as farm-to-school purchasing and school gardens and emerging science, affect food safety in the USDA Food and Nutrition Service school and child-care programs.

The Center will provide science-based support to improve the safety of foods provided through, FNS nutrition assistance programs, particularly those served in schools and child-care settings. A multidisciplinary approach, including both basic and applied research, will draw expertise from fields such as foodservice management, food safety, food microbiology, agricultural production, education and the social sciences.

The Center's leadership team consists of Kevin Roberts, PhD, assistant professor of hospitality management and dietetics who will serve as the director of the Center; Carol Shanklin, PhD, RD, professor and dean of the graduate school; Kevin Sauer, PhD, RD, LD, assistant professor of hospitality management and dietetics; and Junehee Kwon, PhD, RD, LD, associate professor of hospitality management and dietetics.
