Caribbean Quinoa Salad

The centerpiece of our recipe, Caribbean Quinoa (pronounced KEEN-wah) Salad, is a whole grain native to South America. Although it's somewhat similar to other grains, it cooks faster and is higher in protein. It’s also a good source of iron and magnesium.
