Crazy for Kale

Crazy for Kale

Tasty kale can give kids a big health boost. In addition to being a leafy green much like spinach, kale has so many benefits it should star in family meals on a regular basis. Kale provides antioxidants, is an excellent source of vitamins K, A and C, and is a good source of fiber—things growing kids need to be healthy!

Here are some ideas on how to include add more kale into your nutrition plan:

  • Egg white omelet with kale, feta cheese, tomato and onion
  • Whole-grain pasta dish with kale, olive oil and garlic
  • Potato and kale soup with onion and carrots
  • Spinach salad with sautéed kale, vegetables and olive oil and vinegar
