Preparing for Disaster: New Book by the American Dietetic Association Offers Guidance for Foodservice and Dietetics Professionals

CHICAGO -- With the country on heightened alert, many Americans are concerned about their safety. The thought of nuclear, biological or chemical warfare has many people and businesses wondering what to do to prepare for a disaster.

The American Dietetic Association's new book, Disaster and Emergency Preparedness in Foodservice Operations, examines the crucial role of the dietetics and foodservice professional in developing and implementing emergency plans.

"A disaster plan that is well developed and thoroughly thought out will save lives," says registered dietitian and co-author Ruby Puckett. "There is no substitute for preparedness and timely action.

"Because disasters may occur at any time, in many forms and with a varying degree of severity, preplanned procedures must be in place," said Puckett.

The book includes information on:

  • Creating a disaster plan for all types of emergencies, both natural and manmade
  • Choosing food distribution sites
  • Setting up temporary kitchens
  • Decontamination of food following biological, nuclear or chemical disasters
  • Food preparation in an emergency
  • Food storage under adverse conditions
  • Security strategies at foodservice sites

The book also contains a disaster assessment checklist, which can be tailored to each individual facility.

"This book will help dietetics and foodservice professionals, as well as their staff, become better equipped to deal with disasters, whenever and however they arrive," said registered dietitian and co-author Charnette Norton.

Disaster and Emergency Preparedness in Foodservice Operations costs $25 for ADA members and $33 for non-members. It can be ordered online from the American Dietetic Association at "Online Shopping".
