Mushrooms: A Welcome Fungus among Us

There are thousands of varieties of the fungus known as a mushroom, available in virtually every different shape, color and size.
Nutritionally, mushrooms are low in calories, cholesterol-free and essentially fat and sodium-free. This low-calorie favorite packs a serious health punch with antioxidants, riboflavin, niacin, copper, phosphorus, potassium and they are even one of the few natural food sources of vitamin D.
Mushrooms can be eaten raw, grilled or sautéed. Add them to soups, stews, risottos, sauces, salads. Or eat them as a main course in dishes like portabello mushroom sandwiches or mushroom fajitas.
