The amazing health benefits of kale have caught on and people everywhere are enjoying it in salads, smoothies and as side dishes. This dark green leafy vegetable is packed with fiber, calcium, magnesium and more than a day's worth of vitamins A, C and K.
Kale may look intimidating but preparing it is easier than you may think. The stem is edible but the more tender leaves are what you want. To strip kale from its stem, hold the base of the steam with one hand and use a claw-like grip with your other hand and make one fast motion to remove the leaves from the stem.
