Not So Fat Tuesday
Today is Mardi Gras, or Fat Tuesday. Celebrate your own “Not So Fat Tuesday” by lightening up traditional Mardi Gras meals like gumbo and jambalaya.
Gumbos and jambalaya are traditionally loaded with vegetables like okra, tomatoes, garlic, green peppers, celery, onions and fresh herbs. Lighten up the additional ingredients by using ingredients like shrimp, turkey sausage, chicken breast, lean ham, low-sodium broths and tomato pastes and long-grain brown rice.
Add some black-eyed peas to your gumbos since a half-cup serving of these cooked legumes supplies 4 to 10 grams of fiber. They are also packed with protein, other nutrients and phytonutrients, yet contain little fat and no cholesterol.
