During the cold months of winter, German households all over warm up over “Gruenkohl Dinners.” The star of these dinners is gruenkohl, which is cooked kale.
In addition to being a leafy green much like spinach, kale provides antioxidants, is an excellent source of vitamins K, A and C, and is a good source of fiber.
Kale has so many benefits it should star in family meals on a regular basis, not just during Gruenkohl Dinners:
- Egg white omelet with kale, feta cheese, tomato and onion
- Whole-grain pasta dish with kale, olive oil and garlic
- Potato and kale soup with onion and carrots
- Spinach salad with sautéed kale, vegetables and olive oil and vinegar
