Exactly What is an Extract?
This time of year, flavored extracts like rum, maple, hazelnut and peppermint join vanilla extract in spice cabinets everywhere. We know they make holiday baking delicious, but what is an extract?
Extracts are concentrated flavorings from foods and plants dissolved in alcohol. Some extracts like anise, vanilla, peppermint and almond are made by distilling fruits, seeds or leaves. Recipes usually call for small amounts since these extracts are so concentrated.
Extracts also come in meat, poultry and vegetables varieties and are made by concentrating the stock or cooking juices and can be used in marinades and sauces.
