Evaporated vs. Condensed

Many holiday recipes call for a can of evaporated milk or sweetened condensed milk. What are these baking staples?

The difference is actually very basic. Sweetened condensed milk is evaporated milk with sugar added to it. In both, 60 percent of the water is removed. Evaporated and sweetened condensed milk are available in whole, low-fat or fat-free varieties. Sweetened condensed milk is higher in calories because sugar is added. Even though these products seem so similar, they should not be substituted for each other.

Remember, even though evaporated and sweetened condensed milk are shelf stable, they both need to be refrigerated once opened.
