The Miracle of Oil
Saturday marked the beginning of Hanukkah. Traditional Hanukkah foods are rich with flavor and, more importantly, symbolism. No part of the meal is more symbolic than the oil used for frying Hanukkah staples such a latkes and jelly donuts.
If you're creating a traditional meal, celebrate the symbolism of the oil with heart-healthy monounsaturated oils, such as canola oil or sunflower oil when frying and baking this Hanukkah. These oils are very high in monounsaturated fatty acids and can be used as a substitute for saturated or trans fats in baked goods and when frying foods.
