Cool Down with Soup
Looking for healthful foods to enjoy on a hot, summer day? Surprisingly, soup can be the answer! Cold soups can be served as a light appetizer or as a dessert. The good thing about soups is that you can make a large batch and store in the refrigerator for the next few days.
Get started with these summer soups:
- Gazpacho
This tomato-based, raw vegetable soup is perfect for a mid-summer cool down, with a vegetable punch of tomatoes, garlic, onion, cucumber and bell pepper. - Fruit
You can blend together any combination of any fruit for a refreshing after-dinner treat. Try pureed mangoes or blueberries mixed with low-fat yogurt and lime juice. - Avocado
Chilled avocado soup is made by blending vegetable broth, avocado, cucumber and lemon juice. Garnish with cracked black pepper.
