How Do I Cook Lentils?

Lentils are part of the legume family that includes beans and peas. Lentils are high in protein and fiber and low in fat which makes them a healthy choice for meatless meals. Lentils are quick and easy to prepare without pre-soaking. Be sure to rinse them before cooking to remove any dust or dirt. Boil lentils in water for 15 to 30 minutes until they are tender. Mix with seasonings and serve over rice or mixed with vegetables. Try adding lentils to soups, stews and salads.
