I am thrilled to be a recipient of a Chartwells Kids Eat Right mini-grant. I plan to teach the healthy breakfast program to the third grade classes at a local elementary school. In conjunction with the wellness committee and nurse, we are planning age-appropriate hands-on learning activities, and may make yogurt parfaits. This will be part of healthy breakfast month at the school, and will be used to help encourage all students to eat breakfast daily. My presentation will be videoed so it can be shown to the other grades while promoting the school breakfast program. What could me more worthy of our time than to share some of our expertise to try to help improve the health of the next generation?

As a Chartwells Kids Eat Right mini-grant recipient, I look forward to presenting to students and parents about healthy eating. The toolkits and resources provided by the Kids Eat Right will facilitate giving a presentation to elementary students and their parents about the importance of eating healthy breakfasts at home and/or school and to middle school students about eating healthy snacks. As a RD and KER member, I will and can make a significant difference in children’s quality of nutrition for the ultimate goal to prevent or reduce childhood obesity. I also believe we can make a significant difference to empower parents with resources and tools to provide healthy options for their families.

I had the opportunity to use the Family Meals toolkit while teaching two groups of moms with young children. The presentation that was provided offered great ideas and reasons to support the importance of eating family meals. The moms enjoyed brainstorming ideas and recipes with me that they could prepare and cook quickly for their families.

The Healthy Breakfast and Snack toolkits came in handy for this Field Day. The Dietetic Internship Program at Vanderbilt teamed up with Fuel Up To Play 60 and East Literature Magnet School to help manage a field day in May for 500+ students. We are pictured here with former NFL Tennessee Titan Blaine Bishop. The dietetic interns worked as Nutrition Coaches for the event managing sport events and hydration-fueling stations throughout the day. Thanks to Kids Eat Right for providing “turnkey” consistent messaging info for schools.

We delivered three Healthy Snacking presentations to employees and community members on the Tohono O’odham Indian Reservation. Two presentations were given to employees at the Indian Health Services (I.H.S.) facility in Sells, AZ and one presentation was given to the Juvenile Detention Center teens. We reached a total of 32 participants using the easy-to-use and very informative PowerPoint presentations and handouts that were a part of the toolkit. The participants enjoyed the Pistachio-cranberry cookies and the comments that we received were overwhelmingly positive. One of the teens commented, “Oh good, we get recipes and snack handouts—I like to bake and I’ll make these at home.”

As a Kids Eat Right campaign member and dietetic intern, I have used the Cooking Corps organization to bring nutrition and cooking fun to kids with special needs, preschoolers and youth sports participants in the state of Connecticut. For the past two years, I have been honored to receive a U.S. Senate Certificate of Recognition from Senator Richard Blumenthal for my work with kids with special needs. I look forward to using the Kids Eat Right toolkits and continuing my work special needs children.

As Kids Eat Right campaign member, I am collaborating with staff from the YMCA and the University of Kentucky to plan and implement two training programs leading up to a PTA 5K Fundraiser. The first is a Kids Marathon training program for Elementary School students. Students will track their 25.2 miles leading up to race day, where they run the final mile together and receive a marathon medal. The second training program is for middle and high school students and adults. Training participants meet one time a week at the YMCA and volunteer coaches work with them on walk/ run intervals that gradually lead up to running a full 5K. The great thing about both training programs is that it encourages the entire family to get active together. Families also receive Kids Eat Right messages to eat healthier. The Kids Eat Right program is an excellent resource for dietitians. The toolkits are very organized and minimal planning is required. The toolkits are age appropriate and tailored for different groups. I enjoyed teaching two different classes this spring for an elementary after school program. The teachers and students enjoyed learning about better breakfast options and trying new foods. The kids were excited and many of them reported that they shared the recipes with their parents and grandparents.

The Family Meals toolkit was a great way to stimulate conversation with parents and teens. Of special fun was using it when the teens were on tour and able to experience a college classroom! Using the handout and our food models, the girls made plates that showed what they actually would eat prior to the presentation, and contrasted that with what would be a better choice. Fun for them to see the reality!
