What I love about being a RD Coach for EB4K with Play is empowering young students with the knowledge to make healthy, smart food choices for their bodies and mind. These students are really catching on to how the food we eat impacts our health, and are starting to be healthy role models for their friends and family. I love how excited and proud the students are when sharing about “power foods” they have eaten, and the healthy activities they have participated in that week. One student even shared with me how he told his mom he wanted a big bowl of fruit for his birthday party instead of cake this year!

Over the past two years, I have had the opportunity to assist schools in Iowa apply for the HealthierUS School Challenge. I have built lasting connections with school staff, kids and parents that would not have occurred without the Kids Eat Right Meet the Challenge program. I am very lucky to be a small integral part of the many health and wellness school success stories in my state.

I led parent workshops for the RD Empowerment Program at McCutcheon Elementary School in Chicago for the past 2 years. The parents really enjoyed learning how to feed their families healthy, quick, and tasty meals. The parents and children especially loved the interactive cooking demo. I think the most beneficial part of the program for the parents was exchanging ideas that have worked for their families and offering each other ongoing support in their efforts to change.

Columbia Midlands Dietetic Association (South Carolina)

This year the South Carolina Academy of Nutrition and Dietetics had Food Day Events all throughout the state. The Columbia-Midlands Dietetic Association partnered with South Carolina United FC and South Carolina BlueCross BlueShield on October 5th and 6th to celebrate Food Day at the Carolina Cup soccer tournament. Youth at the BB&T and Polo Road soccer complexes had the chance to stop by the Columbia-Midlands Dietetic Association/Blue Cross Blue Shield tent for healthy snacks, fun games, and a chance to win prizes, such as a free cooking class donated by USC’s Columbia’s Cooking.

The Hunger in Our Community toolkit provided a powerful yet alarming message. How is it possible that children may be hungry and obese? The groups receiving the information expressed interest in doing more to address the problems of childhood obesity and hunger. We are looking into developing or sponsoring a food preparation seminar using the Thrifty Food Plan recipes and menu suggestions. We have plans to provide the local food pantry with recipes to distribute and making a donation of non- perishable food supplies. Thank you for this opportunity. I am eager to use the other toolkits in the schools.

Going out into the community to do the Hunger in Our Community toolkit presentations allowed me to meet adult volunteers I would have not have otherwise met, as I am not originally from the Mississippi Delta. At Brandeis University, I collaborated with our Chef and dietetic intern to promote local and sustainable eating practices. The chef prepared a local apple bread pudding with a local apple mousse. The dietetic intern and I educated students about sustainable practices of local apple orchards and provided apple tastings and information on local orchards, apple varieties and ways to eat apples.

This year at West Virginia University we held our very first Food Week. Throughout the week of October 21st, we held multiple events on campus focusing around the Food Day Campaign. We were honored to be Kids Eat Right campaign volunteers by promoting the Eat Real movement on our university's campus!
